Ingredients

For ketchup sauce:

1/2 cup ketchup

1 Tbsp. molasses

1 Tbsp. apple cider vinegar


For Meatloaf:

2 lbs. ground chuck

1 cup fresh minced white onion

1 cup minced celery

1/2 cup chopped fresh cilantro



2 tsp. lemon juice

2 eggs

1 cup finely crushed tortilla chips

Directions

For ketchup sauce: Mix together all ingredients and set aside.

For meatloaf: Preheat oven to 350 degrees. Oil a loaf pan with either cooking spray or oil. Combine ground chuck, onions, celery, cilantro, Taco Seasoning, tomato sauce, lemon juice, eggs and ground tortilla chips in a bowl and mix thoroughly with hands. When completely combined, form into a loaf and place in loaf pan. Bake for 45 min. on middle rack, rotating once halfway through. Remove from oven and coat with spicy ketchup mixture. Place back in oven and bake 15 more min. Remove from oven and let sit 10 min. before serving.
