This protein-packed veggie and grain salad topped with crispy, air fried black bean fritters makes a perfect lunch meal prep for the week. Switch it up with whatever veggies and grains you have on hand, and top with any of your favorite toppings, like cheeses, herbs, and nuts.

Ingredients

For black bean fritters:

2 cans black beans, drained and rinsed

1/2 tsp. baking soda

1 bunch cilantro, roughly chopped

2 shallots, roughly chopped

1 clove garlic, roughly chopped

1/2 cup all-purpose flour


For sautéed peppers and onions:

1 Tbsp. canola oil

3 bell peppers, sliced

1 yellow onion, sliced


For bowl:

1 cup quinoa, cooked

1 cup frozen grilled corn

3 cups chopped kale

Cilantro, to garnish

Cotija, to garnish

Crema or sour cream, to garnish

Directions

Step 1:

Add all black bean fritter ingredients to a food processor and process until coarse but combined. Transfer mixture to a medium bowl, cover with plastic wrap, and chill for at least one hour.

Step 2

Preheat pan over medium-high heat with oil. Season peppers and onions with Salt & Pepper Tableside Seasoning and add to pan. Sauté until soft and slightly charred, about 10 minutes. Remove from pan and set aside to cool.

Step 3

Preheat air fryer to 400 degrees. Form fritters by rolling tightly into 12 to 14 golf-sized balls. Slightly squish each ball to form 1/2-inch thick patties. Oil both sides of the patties and set in the air fryer basket. Air fry for 15 minutes until both sides are crispy and golden in color, flipping fritters halfway through cooking time. Set aside to cool.

Step 4

Divide ingredients between 4 bowls layering kale, quinoa, corn, and Cotija. Drizzle with sour cream and top with cilantro. Serve immediately. To save leftovers, keep ingredients separate in the fridge then dress and assemble before eating.
