2 Tbsp. baking powder


1/2 cup unsalted butter



1/2 cup maple syrup

1/4 cup lime juice

Directions

Step 1: Bake wings

Preheat oven to 250 degrees. In a large bowl, toss wings with baking powder and 1 Tbsp. Saffron Salt. Line a baking sheet with foil and place a greased baking rack inside. Arrange wings on baking rack. Cook for 30 min. Without removing wings from oven, increase to 425 degrees. Cook an additional 40 min. until chicken is light brown and crispy.

Step 2: Make glaze

In a small pot, combine butter, Crushed Red Pepper Flakes, Ground Ginger, maple syrup, lime juice, pepper, and remaining 1 tsp. Saffron Salt. Bring glaze to a simmer over medium heat, then reduce heat and cook for 3 to 4 min., stirring occasionally until glaze thickens slightly.

Step 3: Glaze wings

In a clean large bowl, toss wings with most of the glaze. Return wings to baking rack and oven for 10 min. Brush or drizzle wings with remaining glaze and serve.
