Juniper Berries
The main ingredient for flavoring gin, as well as other liqueurs. Juniper berries are intensely spicy in flavor, with a touch of pine. Great crushed into a rub for grilling or roasting gamier meats, as juniper tends to help reduce gaminess, as well as add a nice tart flavor. Crushing juniper berries before use will also release their oils and enhance the spicy and piney flavor they impart. Additionally, juniper berries are great to use for marinades and sauces.
