When making any curry, some of the best spices to use are turmeric, coriander, cumin, cardamom, saffron, fenugreek, lemongrass, mustard powder, ginger, chili powder, cinnamon, clove and nutmeg. What spice blends are the most unique or rare?

Spices that might be considered as more rare in the U.S. could include Saffron, Asafetida, Sumac Berries, Grains of Paradise and Fennel Pollen. Spices that might be called "exotic" ultimately depends on where you're from.
