This blend is bittersweet and earthy in flavor, with citrus and herbal notes, while Whiskey Barrel Smoked Black Pepper adds additional spice and smoky depth. Slowly roasting with broth in the pan helps the roast avoid overcooking or drying out.

Serve with a pan sauce made from prime rib drippings, maple-spiced carrots, and finish the meal with an equally decadent (and smoky) pecan pie.

Ingredients

1 Whole Prime Rib Roast (about 8-12 lbs)




5 cloves garlic, minced

½ cup unsalted butter, softened

2 Tbsp. olive oil

6 cups beef broth

Directions

Step 1:

Take the prime rib out of the fridge 1-2 hours before cooking to bring it to room temperature. Preheat oven to 450 degrees.

Step 2:

In a small bowl, mix the softened butter, minced garlic, Flat Irons Prime Rib Rub, Whiskey Barrel Smoked Black Pepper, and Mayan Sea Salt until well combined. Whisk in the olive oil.

Step 3:

Rub the butter mixture evenly over the entire surface of the roast and place in a roasting pan with the fat side facing up.

Step 4:

Add 2 cups of broth to the roasting pan and roast for 30 min. or until the outside of the roast is well browned. Reduce heat to 350 degrees, add 2 more cups of broth, and roast for 2-3 hours until the internal temperature of the roast reaches 115 degrees. Halfway through roasting, add the remaining 2 cups of broth to the roasting pan. If the roast is starting to blacken, tent it loosely with foil.

Step 5:

Remove roast from oven and let it rest for at least 30 min. or until the internal temperature reaches 125 degrees for medium rare. Carve and serve roast immediately.
