2 1/2 lbs. russet or Yukon Gold potatoes, peeled and quartered


2 cups heavy cream

1/4 cup unsalted butter

Directions

Step 1: Cook potatoes

Place potatoes in a large pot and add cold water to cover by 2 inches. Add Mayan Sea Salt. Bring to a boil and cook potatoes for 10 to 15 min. until easily pierced to the center with a fork but not falling apart. Remove from heat and strain.

Step 2: Mash & season potatoes

Return potatoes to pot and use a potato masher, ricer, food mill, or fork to mash to desired consistency. In a small pot over medium heat, bring cream just to a simmer, then add to potatoes. Add butter and seasoning of choice and stir until creamy. Add Mayan Sea Salt to taste.
