Sweet Jamaican Allspice and minty California Bay Leaves give this refreshing Cuban cocktail layers of complex flavors.

Ingredients

For simple syrup:

1 cup water

½ cup granulated sugar



For mojito:

1 sprig fresh mint, plus more to garnish

1 oz. simple syrup

3 oz. grapefruit juice

2 oz. white rum

Club soda, to top

Grapefruit slices, to garnish

Directions

For simple syrup: In a small pot over medium heat, stir water and sugar until sugar dissolves. Add Jamaican Allspice and California Bay Leaf. Bring mixture to a boil then remove from heat. Steep until room temperature, about 20 min. Strain and store in a sealed container in the refrigerator.

For mojito: In a cocktail shaker, muddle sprig of fresh mint in simple syrup to release oils. Add grapefruit juice and rum. Shake and strain into tall glass filled with ice. Top with club soda and garnish with mint and grapefruit slices.
