A lighter take on classic burgers, this black bean burger is perfect for summer grilling. Seasoned with Mexican Street Corn Seasoning and topped with a simple corn salsa and cotija, you'll get all the notes of elote in a hearty main dish. Top your burger with any of your favorite toppings, or grill up these patties ahead of time for topping salads or veggie and grain bowls.

Ingredients

For burgers:

1 Tbsp. canola oil

1 bell pepper, finely diced, divided

1 large yellow onion, finely diced, divided


2 (14 ounce) cans black beans, drained, rinsed, and patted dry

1/2 cup bread crumbs


2 large eggs

For corn salsa:

1 bag frozen grilled corn

1 jalapeño, finely diced

Juice of 2 small limes

To assemble:

4 hamburger buns or 8 slider buns

Cotjia cheese

Directions

Step 1: Sauté pepper and onion

In a medium pan over medium-high heat, heat oil until shimmering. Add 1/2 of the bell pepper and 1/2 of the onion and sauté for 7 to 8 min. until onions are translucent and peppers are soft. Add Minced Garlic and sauté until garlic is fragrant, about 1 min. Remove from heat and reserve.

Step 2: Form burger patties

Line a sheet tray with parchment paper and set aside. In a large bowl, mash black beans thoroughly with a fork or potato masher, leaving only a few whole beans. Add bread crumbs, Mexican Street Corn Seasoning, eggs, and cooked pepper mixture. Mix thoroughly and form into 4 large or 8 small burger patties. Set patties on prepared sheet tray, cover, and refrigerate for at least 30 min. or up to overnight.

Step 3: Make corn salsa

In a medium bowl, combine corn, jalapeño, lime juice, and reserved uncooked pepper and onion. Mix until well-combined. Cover and chill until ready to use.

Step 4: Grill burgers

Preheat grill or grill pan for medium-high heat. Grill burgers for 4 to 5 min. per side until golden brown and crispy.

Step 5: Assemble and serve

Layer burgers on buns with corn salsa and crumbled cotija cheese.
