A super simple blondie with hints of floral cardamom, sweet apricots, and crunchy pecans. Saffron Salt is the true star though, adding a bright note of vanilla and balancing the sweetness with a touch of salt.

1/2 cup (1 stick) unsalted butter



1 cup (packed) light brown sugar

1 egg

1 cup all-purpose flour

1/2 cup dried apricots, minced

1/2 cup pecans, chopped small

Directions

Step 1: Make batter

Preheat oven to 350 degrees. In a small pot over medium-low heat, melt butter with Saffron Salt and Ground Inner Cardamom Seeds. Pour into a medium bowl and stir in brown sugar. Stir in egg until thoroughly incorporated (if butter and sugar mixture is hot, let cool for about 5 min. before stirring in the egg so it doesn’t scramble). Fold in flour, apricots, and pecans. The mixture will be very thick.

Step 2: Assemble and bake

Spoon the batter into an 8-inch square pan lined with parchment paper. Spread mixture evenly and sprinkle generously with Saffron Salt. Bake for 25 to 30 min., or until a toothpick inserted into the middle of the blondies comes out clean. Let cool completely in the pan before cutting and serving.
