3 tsp. curry powder of choice:






2 cups boiled water

1/2 cup mixed chopped nuts (e.g. almonds, cashews)

1/2 cup mixed chopped dried fruit (e.g. apricots, cherries)

Directions

Melt butter in a wide skillet over medium heat. Add couscous and stir constantly for 5 min. until couscous is slightly browned, toasted and fragrant. Stir in 2 tsp. of the curry seasoning and 1/4 tsp. of the salt. Slowly pour in boiled water and stir until bubbling subsides. Remove from heat, cover and let sit for 7 min. Remove cover, fluff couscous with a fork and stir in nuts and fruit. Taste and add remaining 1 tsp. curry seasoning and 1/4 tsp. salt  if desired. Serve warm or at room temperature.
