3 cups plus 1 tsp. all-purpose flour, divided, plus more to dust

1/4 cup granulated sugar

1 tsp. baking soda


1/4 cup unsalted butter, cut into pieces

1/2 cup currants, raisins, or dried cranberries




1 1/2 cups buttermilk

Directions

Step 1: Prepare dough

In a small bowl, combine 3 cups flour, sugar, baking soda, and Fine Pink Himalayan Sea Salt. With a pastry blender or a fork, cut butter into dry mixture until it resembles a coarse meal. Stir in dried fruit of choice, Dutch Caraway Seeds, Cracked Rosemary, and Parsley. Pour in buttermilk and mix until dough comes together. Knead for 30 seconds in the bowl.

Step 2: Shape and bake

Preheat oven to 350 degrees. Line a sheet tray with parchment paper. Turn dough out onto a heavily floured surface (dough will be very sticky) and knead for another minute. Do not over-knead the dough. Shape into a round loaf and place on prepared sheet tray. Sprinkle remaining 1 tsp. flour over top of loaf. Cut a large "X" across top of loaf, about 1-inch deep. Bake for 40 to 50 min. until golden brown. Let cool before slicing.
